What makes durum different from ordinary wheat?
Durum is the hardest of all wheats. Its glassy, amber kernel breaks into sharp, golden granules rather than soft flour, and its natural colour shines through in everything it is cooked into.
Fada, lapsi, sooji, rava, Durum Semolina: what is the difference?
Only the size of the granule. All five come from the same durum wheat and are separated on our sieves: fada is the boldest, then lapsi, then sooji, then the finer rava, and finally Durum Semolina, the finest of all.
Is our Kesri Sooji the same as Bahut Badiya Kesari Suji?
Yes. It is the same durum sooji from the same mill. Bulk buyers get it in 30 kg and 50 kg bags, and homes get it in 500 g and 1 kg Bahut Badiya packs. The same is true of Kesri Rawa.
